Story Behind the Recipe
In June 2022, JP and Amelia went camping at Taylors Falls Campground on a muggy Minnesota weekend. JP is the Service Manager at Hilltop Camper & RV in Fridley, but on this trip he was simply a husband, soon-to-be dad, and campfire cook trying to make the most of a last-minute adventure.
Amelia was five months pregnant, the mosquitoes were out, and the adventure included sleeping on a 3-inch foam mattress. Pregnancy cravings had already brought plenty of memorable food requests, from blue snow cones to Casey's crushed ice after prenatal visits.
On this trip, fruit was the craving. Once they realized fruit had not made the grocery list, they made a special store stop before settling around the fire.
Later that night, JP was ready for a classic s'more on the new smiley-face roasting stick. Amelia sliced strawberries and pineapple, skipped the chocolate, and layered the fruit into her campfire treat. Just like that, the fruity “preggo s'more” was born.
The result was simple, brilliant, and tasty. Today, their son enjoys backyard bonfires and has found his own obsession with s'mores, making this recipe part of a growing family camping tradition.
